TUESDAY TREAT: BLUEBERRY WAFFLES

I hope you all have had a wonderful week so far! I wanted to share a recipe that has been a favorite of mine since I was little. The original recipe is a family secret, so I modified it quite a bit, but they are still wonderful! Especially with the delicious sauce recipe to pour over it. 
YOU WILL NEED: 
For The Waffles:
2 Cups flour ( I used whole spelt) 
1 Cup blueberries
1/2 Cup oatmeal
1/4 Cup milled flax
1-1/2 Cup milk
1/4 Tsp cinnamon
2 Tsp sugar
4 Tsp baking powder
1 Tbsp canola oil
3 eggs, separated

For The Sauce:
3 Cups milk
1 Cup sugar
1/4 Tsp vanilla
Mix all the ingredients together leaving the egg whites aside.  

Whip the egg whites with an electric mixer until they hold peaks then fold gently into the batter. 
Pour the batter mixture over the waffle iron. Make sure that you do not pour too much batter on the iron or it will overflow when it expands. Pour about as much as depicted in the above picture. 
Let the waffles cook on the iron until they are starting to get golden brown. Once they are done, you can typically take a fork and pull up the edge. They should come off of the iron easily. 

As the waffles are cooking, heat the milk over the stove on high. Once the milk starts to boil add the sugar. Reduce heat to a simmer and stir until the sugar dissolves. Finally, reduce the heat to low and stir in the vanilla. 




These waffles are so easy to make and so delicious! You can even change it up a bit and add strawberries or peaches.

  5. oh my gosh, my mouth is watering! i love waffles and syrup, but changing it up once in a while is a good idea. i've never thought of that kind of a sauce before-- sounds delicious!! definitely keeping this recipe in mind. possibly saturday morning breakfast? :)
