TUESDAY TREAT: GRILLED CHICKEN, MUSHROOM AND AVOCADO SANDWICH

I have to apologize that I have been rather absent from the blogging world since last Thursday. I have had a lot filling up my time these past few days leaving little to no time to blog. My twin brother is getting married to a very sweet girl that I am so happy to (soon) call my sister-in-law this weekend. Their wedding is going to absolutely beautiful! I'll try to post pictures as I can on Instagram

All that to say, I finally stole a little bit of time to share this delicious Tuesday Treat with you. It's easy and can be made in 45 minutes or less. 




YOU WILL NEED:
two pita pockets
one chicken breast
one portabella mushroom
handful of spinach
half of an avocado
a few slices of red onion
For the chicken: 
I covered it with a thin layer of olive oil mixed with a few shakes of salt and pepper and a pinch of rosemary. 
Start grilling the chicken.
While the chicken is grilling, cut the mushrooms in slices, slice the onion, and the avocado. Rinse the spinach.    

After the chicken is cooked half way, place the mushroom slices on the grill 
- Careful not to touch the chicken with them!  
Once the mushrooms are soft and the chicken is fully cooked take them off the grill and let the chicken cool a bit before cutting it into slices. 
Prepare the sandwich by heating the bread for a few seconds in the microwave and skillfully placing the ingredients inside. 

This recipe is so simple, I feel kind of silly posting it, but I found it to be really tasty. I, personally, do not like ranch dressing, but, for those of you who do, I can see it being enjoyable with ranch or maybe even a cucumber dressing of some sort. 
I hope to see you again soon this week. As I said, I will try to snap a few Instagrams of the wedding this weekend as I can! It's exciting to think of having all of my friends and family together for such a joyous occasion!
