TUESDAY TREAT: MINI PIZZA

These mini pizzas are a simple yet delicious meal that can be made in about 45 minutes or less.  
I find that the most wonderful thing about these little guys is that you can make them out of any of your favorite ingredient combinations. I particularly like to make them when I need to use up veggies before they go bad. I think that they would also be fun for a "create your own pizza" night with friends.  
You will need:
-Flat bread (this recipe fits on 6 of the little sandwich round halves. Pita bread is also another great option.)
-Pesto (I used store bought just to save time, you can make your own though.)
-1 Portabella Mushroom
-1 Tomato
-7 baby peppers or 1 large pepper 
-1 red onion 
-2 handfulls of baby spinach
-6 slices of cheese (I used Muenster, but provolone is tasty too!) 

I usually cut deli turkey into strips and add it as well, I just forgot to buy some when I was at the market earlier. 

Preheat oven to 350 degrees(f)

While oven is preheating, spread about a teaspoon of pesto on each round half. 

Place the round halves in the oven to toast for about 7 minutes
While the bread is toasting, cut each vegetable into thin strips except for the spinach. This will help them to cook faster. 
I did not use the whole onion. I cut two thin slices off of it then cut those in half. A little bit of onion goes a long way. 
Once toasted, pull the round halves out of the oven and layer on the toppings minus the cheese.
When layering, I suggest starting with the spinach, then layering on the tomatoes, mushrooms, peppers and onions. Spread the ingredients evenly amongst the 6 halves. 

Leaving the cheese off, place the pizzas back into the oven for 15 minutes or until the vegetables are partially cooked. 
Take the pizzas back out of the oven and place the cheese on top. I usually tear the cheese in half to fit fit it a little bit better. 

Change the temperature of the oven from 350 degrees(f) to 400 degrees(f) 
Place the pizzas back in for the last time until the cheese starts to brown in some areas. (about 10 minutes) 


Once the cheese is browned, take out of the oven and enjoy! (After they have cooled for a few minutes. You wouldn't want to burn your mouth!)

  1. Those look so tasty :). when I lived in an apt that only had a toaster oven, pita bread pizzas were my favorite thing to make--I like mine with artichoke hearts, asparagus, mushrooms, and cherry tomatoes.

    The photography on your blog is beautiful, by the way!
