TUESDAY TREAT: BAKED PASTA WITH TOMATOES AND SPINACH

This is one of the simplest dishes I have ever made and turned out to be so delicious. Not to mention, its quick to make! 



You will need:
Spaghetti ( I used 1/4 pack) 
1&1/2 Roma Tomatoes
1 Handful of Baby Spinach
1/2 block Mozzarella Cheese 
Extra Virgin Olive Oil
Salt 
Pepper
Thyme

Preheat oven to 350 degrees(f)
Begin by cooking the noodles according to the instructions on the package. 
While the noodles are cooking, prepare the tomatoes, cutting them in slices. 
Wash off the spinach.
Place half of the spaghetti into the bottom of the baking dish, put the other half in a bowl to season. 
Layer the spinach and half of the tomatoes on top of the spaghetti drizzling with a little bit of olive oil. 
Season the remaining half of spaghetti with salt, pepper and thyme to your liking and drizzle with a bit of olive oil. 

Layer the remaining layer of spaghetti topped with another layer of tomatoes and a little tuft of spinach. Slice the mozzarella and spread it well over the dish. 

Place the dish in the oven for 30 minutes. Once the cheese starts to brown take the dish out, let it cool for a bit, then enjoy!

  6. You know what? I actually have every single one of those things already in my possession! How nice. I'm always looking for new, simple (and delicious, of course) recipes for the fiance and I to try. We're pretty adventurous eaters.
