This week I have been craving salad like no ones business. So, I thought I would share the delicious salad I made the other day. Now, If I am going to eat a salad for lunch, I don't like wimpy salads. Wimpy salads don't fill me up like a good, hardy salad tossed with a variety of vegetables, seeds and cheese. During the summer, I especially love to add berries to my salad and use a red wine or fruity vinaigrette. Since it is winter I have been drawn more towards the less sweet salad flavors. Rather a bit more tangy and peppery to the taste.
For the salad you will want:
3 leaves of Romaine
2 leaves of kale
1 handful of spinach
1 Crimini mushroom (sliced)
1/4 of a bell pepper sliced
1 slice of an onion cut in smaller sections
For the Dressing, Mix:
3 Tablespoons Apple Juice
1 Tablespoon Extra Virgin Olive Oil
1 Teaspoon Lemon Juice
1 Teaspoon Honey
Oregano, Salt and Pepper to flavor
Toss everything together with the dressing
What I love about salads is that they are so easy and so versatile. You can have a different salad every day depending on however you choose to mix it. What's your favorite salad mixture?
